Caramel Cookie Pie Milkshake Recipe
Share
Summer is the perfect excuse to turn your favourite bakes into something cold, creamy and completely over the top. This caramel cookie pie milkshake is inspired by one of DoughGirl’s most indulgent treats: the Caramel Cookie Pie Slice.
Instead of using a plain biscuit or a scoop of caramel sauce, this recipe starts with a proper cookie pie slice. The result is part milkshake, part pudding, and very much a “grab a spoon and a straw” moment.
It is easy to make at home, looks amazing in a tall glass, and is ideal for a weekend treat, movie night, summer garden dessert or sharing with someone who always chooses the caramel option.

Ingredients
For 1 large milkshake or 2 smaller servings:
- 1 DoughGirl Caramel Cookie Pie Slice, chilled
- 3 scoops vanilla ice cream
- 100ml whole milk, plus a little extra if needed
- 1 tablespoon caramel sauce
- Extra caramel sauce, for drizzling
- Whipped cream (optional)
- Cookie crumbs or chocolate curls (optional)
- A small piece of cookie pie, to garnish
How to make caramel milkshake with a cookie pie slice
1. Chill your glass
Place your serving glass in the fridge or freezer for a few minutes before making the shake. A cold glass helps keep the milkshake thick for longer and makes the caramel drizzle set slightly against the sides.
2. Chop the cookie pie slice
Cut the DoughGirl Caramel Cookie Pie Slice into small chunks. Keep one small piece aside for the rim of the glass. For more texture, leave a few pieces slightly bigger so they create little cookie pie bites in the shake.
3. Add the milkshake base
Add the vanilla ice cream, milk and caramel sauce to a blender. Blend briefly until smooth and creamy. Start with 100ml milk for a thick shake, then add a splash more only if your blender needs help moving.
4. Add the cookie pie
Add most of the chopped Caramel Cookie Pie Slice to the blender. Pulse in short bursts rather than blending for too long. This keeps the shake creamy while still leaving little pieces of cookie, chocolate and caramel throughout.
5. Dress the glass
Drizzle caramel sauce around the inside of the chilled glass. Pour in the milkshake, then top with whipped cream if you want a fuller dessert-style finish.
6. Add the final DoughGirl touch
Finish with cookie crumbs, a little extra caramel drizzle and the reserved piece of Caramel Cookie Pie Slice on the rim. Serve straight away while the shake is cold, thick and full of texture.
Serving Ideas
For an extra-thick milkshake, use less milk and make sure your ice cream is very cold. For a smoother shake, blend a little longer. For a chunkier shake, pulse only a few times and stir through extra cookie pie pieces at the end.
You can also swap vanilla ice cream for caramel, chocolate or butter pecan ice cream if you want a richer flavour. Add a pinch of sea salt to balance the sweetness, or top with chocolate sauce for a double-drizzle finish.
For parties, summer get-togethers or movie nights, the Full Caramel Cookie Pie is an easy upgrade. It comes pre-sliced, so you can blend a few pieces into milkshakes and keep the rest for decorating, sharing or serving warm alongside each drink.
Why Cookie Pie…
A normal caramel milkshake is sweet and creamy, but a cookie pie milkshake gives you more layers. The cookie base adds buttery baked flavour, the chocolate brings richness, and the caramel pieces create little ribbons of sweetness as they blend.
The DoughGirl Caramel Cookie Pie Slice also gives the shake a thicker, more dessert-like texture. It is not just a flavouring; it becomes part of the milkshake itself. That is what makes this recipe feel more special than adding a biscuit on top.
